How we stretch taco night to feed more people 🌮

Learning Old Fashioned Ways in a Modern World

with Laura Lawrence

Hi friends,

Taco night is one of the easiest dinners to make from scratch — but it can also get expensive fast if you’re feeding a family.

Over the years we’ve found a few simple ways to stretch taco night so it feeds more people without losing flavor.

Here are a few things we do at our house:

1. Add refried beans to the meat

Once the taco meat is cooked, we often stir in a can or two of refried beans.
It blends right in, adds protein and fiber, and stretches the filling much further.

2. Make it a full taco bar

Instead of just meat and cheese, we put out lots of simple toppings:

• lettuce
• tomatoes
• onions
• salsa
• sour cream
• avocado when we have it

Everyone builds their own tacos and the meal naturally goes further.

3. Start with homemade seasoning

When you mix your own taco seasoning, you control the flavor and the salt — and it tastes so much better than the little packets from the store.

I actually put together a free Homemade Spice Mix & Sauce Guide that includes the taco seasoning we use most often.

And to make it even more helpful, I recorded a full taco night cooking lesson where I walk through the whole meal — from mixing the seasoning to building the tacos.

This lesson comes from one of our Junior Cooking Club classes, where we teach kids and families practical cooking skills in the kitchen.

You can download the guide and watch the lesson here:

Once you start mixing your own spices, it’s hard to go back to the packets.

Happy cooking,

Laura

That’s exactly how you lose your garden. I just put out a new video walking you through exactly what I’m doing right now—what I’m preparing, what I’m holding off on, and when I actually plant (based on what works here, not what the internet says). Because excitement doesn’t grow food… timing does. Watch HERE 🎥...

gardening in the midwest

Laura Lawrence Hi Reader If you’ve been thinking about starting a garden this year—you’re in the right place. Gardening in the Midwest (especially here in Michigan 🌿) is not the same as what you see online from warmer climates. Timing, soil, and weather matter a lot more than most people realize. That’s why I put together a simple, practical guide: 👉 How to Start a Garden in the Midwesthttps://foodprood.com/how-to-start-a-garden-midwest/ Inside, you’ll learn: When to actually plant in our...

Laura Lawrence From Seed to Plate: Where Real Food Freedom Begins Hi! One thing I do a little differently…I teach for our area.Because if you’re following someone in a completely different climate, you’re going to plant at the wrong time. You’ll feel behind… or too early… or like you’re doing something wrong. You’re not. You’re just not gardening in their conditions. Our soil is different. Our weather is different. Our timing is different. And that matters more than anything. That’s why everything I...
